Sweet Kale Salad with Grilled Chicken

Sweet Kale Salad from Costco. A vegetable salad kit including: broccoli, brussels sprouts, cabbage, kale, chicory, dried cranberries, roasted pumpkin seeds, poppy seed dressing




Open bag and mix vegetable salad with dressing and dried cranberries and roasted pumpkin seeds.

Labeled: Gluten free, contains 7 superfoods. All ingredients in a bag. Just toss and serve. Excellent source of vitamin A and C.

Nutrition Serving 1cup.
140 calories.

Price: $0.49/serving. 9 servings in a bag. What??? Who eats only a cup of salad.


OK, the salad was easy to make and it tasted delicious but the poppy seed dressing, which is what makes this salad appealing to even the no-salad eaters, is not a healthy option, gluten free yes but full of GMO. If at home a healthier option can be made....for being on the run I must explore other options.

Chicken was marinaded in pickle juice for about 1 hr and then covered in garlic and lemon juice mixture before grilling. Simple but again not something that can be done while traveling.

Organic Macaroni Red and White Quinoa by GoGo Quinoa



3-4 quarts of boiling water
1/4 cup Quinoa Macaroni

Add pasta to boiling water. Stir often during first 2 minutes. Cook additional 5 minutes stirring occasionally (for al dente texture).

Labeled as Organic, No GMO, Gluten Free, ready in 7 minutes.

Nutritional serving size: 1/4 cup which is perfect for one person.
200 calories with only 9 from fat.

4 pieces - Microvawe for 45 minutes (I did 6 pieces for the same time since that is the serving size)

Living Gluten Free

The  sudden realization that a gluten fee diet may be what my body is asking for was inspired by the tennis player Djokovic.

Challenges:

  1. I know nothing about gluten free diets besides no eating wheat products
  2. Traveling all the time makes it hard to plan meals
Challenge accepted!

Day 0,  yesterday, avoided products with flour, avoided vodka made out of wheat, avoided malt whiskey. Right there is a healthy start!

Day 1, since it is the weekend I headed to Costco and to my surprise they offered lots of products gluten free. Came home with a box "free" goodies.


The research continues....
